All-purpose vegetable tomato pulpa/ pessata / sauce.

This is my ‘go to’ sauce for many meals, lasagne, ‘spaghetti pie’ for my children, tomato sauce for pizzas etc………

This is the tomato base sauce for lasagne, moussaka, and pizzas!! This is when I pump garlic and onions into my children.

A long time ago I had a Sicilian friend in London who told us that his mother always put sugar in the raw tomato sauce – it counters the acidity of the tomatos – Since then, I always put a teaspoon of sugar into a base tomato sauce.


Quantity depends on number of people to be fed, but it keeps in the fridge for a few days, or freeze to use later.



1 or 2 large onions

6-7 garlic cloves

1 or two tins of tomato or fresh ideally (2kg)

3 carrots

Optional butternut squash/ courgette / or any other vegetables you would like to hide in your children’s food!

Lashings of olive oil

Tspn salt

Tspn sugar

Herbs – Oregano, rosemary etc


*For a vegan lasagne use ground cashew nuts, for gluten free use only courgette slabs, which I prefer to fry lightly on griddle for flavour. Or use GF lasagna.

*For Moussaka sauce I add more flat leaf parsley to flavour the sauce.



Saute the onion and garlic, olive oil with a small amount of water on a very low heat.

Add tomatos, carrots, and any other veg you wish to add, cook on low heat.

Add in salt and sugar, herbs as desired.

Once the vegetables are soft, blend with a hand held blender.

Now you have a multi-purpose sauce for use with pasta, pizza, lasagna

food, tomatos. childrens food, food for kids, yoga retreat, vegetarian food, vegetarian lasagna, vegetarian pizza,
